I don't think I've ever seen a Chinese fried rice recipe call for butter before. I'll have to try this - thanks, Gambo!

Yum yum. Video request: Can you please make a video on how to make/prepare white rice that's specifically made for frying/fried-rice? E.g.: The correct water to rice ratio when cooking, and how to store it for next day frying (in the fridge?, spread on a baking sheet? etc), and any other neat tips and tricks. I know it sounds simple..but I'd love to know the correct method and technique for making simple white rice for fried-rice.

Hi, some people prefer their white rice left over night in the fridge. It is usually in a bowl or plate with plastic wrap over it before placing it into the fridge. For the preparation of rice that can be used for fried rice, check this older video out: kzbin.info/www/bejne/hKOnZH6cjNKrrKM thanks!

Less Talk, More Delicious i always use old cold rice for fried rice. Don't use newly cooked rice.

I have watched this video several times and I want to try and make it. Could I marinate the chicken with a little of that Chinese cooking wine. ( I forgot how to spell it) and some soy sauce since I cook the chicken on a lower heat? Is it ok to use left over rice or should I make fresh rice? Thank you guys so much for doing these videos. They are so fun to watch. Have a wonderful day!--------------------Tressa Daigle

I have a question. ..I see other chefs cooking these recipes using the yolk and egg whites..but gambo only uses the whites...is it traditionally made with only the whites or is that a chefs preference of gambos, and if so why does he prefer it that way? how does it change the recipe?? just curious and learning, thanks! !!

I know what you mean; some friends and I are planning to go to Japan soon and I’ve been watching videos on Asian cuisine to whet my appetite, but I somehow mostly gravitate to fried rice vids. I actually plan on trying to make my own now that I know so much about it lol
