Try it with a splash of sesame oil, some sesame seeds, and a touch of white pepper. The flavors are accentuated just a wee bit more to make it irresistible. ☺️

I learned about Kewpie (technically QP) Mayonnaise when I was living in Japan and that's my primary mayo here in the states. If you want to take your mashed potatoes from really nice to sublime, add a tablespoon full of Kewpie to it along with your usual preferred ingredients and blend well. You'll thank me later...

Sometimes when I just too lazy to make full on Indonesian fried rice , I just tossed rice with butter and egg, put a bit salt and pepper to taste. Just for some quick dinner. This recipe is the fancier one.

If you do it again, add a little bit of mild mustard to the mayonnaise and that will create the japanese mayo.

Just a note, adding water to your rice depends on the rice variety. Some do needs an extra, others don't.

CultureofBlame correct, like long grain rice. You measure 3 cups of water with 2 cups of rice, 4 -6 servings. She is making short grain rice, so the measurement is different. There are different brown rices which may need more water per cup of rice. 🤷🏾♀️

I just found ur channel & I love it. I am from Iran & love asiatique food. Rice for us is the main dish & what we do for that extra humidity is to put a cloak under the lid. It preserves all steam. My grandma would never lift the lid until the rice was cooked. If u did that, she would considered ruined. Thank u for ur recipes.

Growing up here in Hawaii we eat Japanese sticky rice. You were taught at a young age to make rice before dinner was ready. The way our moms taught us was wash/rinse and put enough water where it measures up to the first line on your index finger. PERFECT every time!! We do use a rice cooker tho not pot on stove:)

I tried this today and my mom loved it! Everyone grabbed seconds. I do not have Kewpie Mayo so I eyeballed the amount used in this video (1 1/2 cups rice {then cook] i used about a little over a tablespoon mayo) and added (1/2 teaspoon) rice vinegar and (1/8th teaspoon) sugar together as a substitute! It's really sublime with the Butter. Ties the dish together nicely. Thanks for sharing~

That tip on retaining that same amount of water for evaporation for any amount of rice is genius. The first knuckle trick would also be the same concept, but you would need to use the same pot every time when you nailed the cooked rice texture (and remembered the 'right' knuckle measurement).

When I was broke and living in Korea, I would get free kimchi and rice at the goshiwon, I'd mix in some mayo to mellow out the kimchi a little bit, and usually add a boiled egg, it wasn't bad..

Tried the mayo trick today and it's a gamechanger. I was a bit skeptical but it looks so good in the video and my fried rice is never perfect. This is the first time I made something really close to restaurant fried rice. I'm a believer now. Definitely worth the little extra effort.

Not being an egg eater, I use "Vegenaise" instead, and have done so for many years I never thought of it as a secret ingredient, but now I'm awarding myself a PhD. in Culinarianism. BTW: being a Basmati Rice loyalist, it's 2:1 water:rice, done in less than 15 minutes on low-low heat, covered, with dried parsley and basil added near the end, and half a stick of butter, sliced, while other ingredients are cooking. Thank you Marion, this recipe is so good! Cooking freaks like me do little changes to recipes - like you. To the garlic in the butter I added 4 prawns and some surimi, all cut in small pieces. The result was the most delicate rice dish. The "secret" ingredient is pure magic! whoever came up with this idea is a genius.

This is the bomb. Omg it is so good. I did not have kewpie Mayo :( but I used Hellman’s, a squirt of mustard, another person suggested, and just a touch of rice wine vinegar). It was perfect. I did dice some carrots and onions also. Just a small amount and very tiny. I was replicating the rice from the Habatchi restaurants. I also used calarose rice. I don’t know what else to say. Bravo.

Skip the parsley and throw in some green onions. I’ve also found that you dont need to soak rice before you cook it, if i did that the way i cook sushi rice in a pot, the rice would be mushy. 🙃
