Hi, Charlie - I recently bought an ice cream maker from QVC, and I was excited to get it, but so disappointed to see that 100% of the recipes call for regular sugar (and LOTS of it!), with no hint of whether sweetener substitutes would be okay, and if so, what ratio to use. I wasn' t sure if the heavy granulated texture of the sugar was necessary for success in the recipes. So I started searching Google and KZbin for sugar-free recipes, and I just stumbled upon this vid from you. I have all the ingredients for this recipe on hand, so I will definitely be making the base tonight, and I look forward to churning the ice cream tomorrow. I'm sure it's going to be great! But while watching this video, my wandering ADD eyes noticed other shiny bright objects coming into view - first, the fact that you're a native New Orleans, just like me - always bonus points for that! I'm currently living in Missouri, but I miss NOLA so much! And then, OMG, my sidebar was overflowing with other Charlie vids that I can see I MUST try as soon as possible! It just so happens that this is grocery day, as my fridge and pantry are staring to show lots of bare spots. So even though I can't make them all the recipes at once, I will definitely be checking out many more vids from you as I create my grocery list order for InstaCart today! I'm very excited to see that you have numerous sugar-free recipes. I am not diabetic, and I'm not doing keto per se, but I like low-carb and sugar-free food and recipe choices for health reasons and also because I can have bigger servings without feeling guilty (!), and they don't make me sleepy, like carby, sugary foods do. You are my hero! I have subscribed to your channel, and I look forward to watching your other vids and trying your YUMMY-looking recipes. And thank you again for showing how easy it is to make a sugar-free ice cream that is also not over-the-top laden with fat grams, as many of the other DIY ice cream recipes are. Love it! I make my own ice cream too, except I don't make a custard out of it and I use Birch Xylitol for the sweetener. I hate the taste of Stevia. I love making chocolate almond ice cream. When I make vanilla ice cream, I sometimes add homemade keto cookies or unsweetened chocolate chips to the ice cream while it's in the final stages of churning. Delicious! 😋

That's awesome. No, using additional almond milk will not work. It will turn into hard ice. The heavy cream will make the ice cream creamy.

You might want to try allulose as a sweetener. Doesn't affect blood sugar and stays "scoopable" even after hardening.

THANKS for the recipe charlie anddrews- i was getting close to type 2 diabetics, so i dont gamble on all the suger laiden ice cream- i got to give this a try, i been using munk fruit sweeter in my coffee last few years/ i just eat a bowl; of regular ice cream and will check my glucose at 60/90/120/minnuts to see how bad my insulin maker is/ I just bought some buckwheat groats, and it is a friend to diabetics allso, THANKS again.
