Hey there :) it's for extra flavour, as these spices go well with plums. Of course this is ultimately a matter of personal preference, so feel free to omit the spices if you prefer👍

Because of lemon juice it tastes like yaak.. It spoiled my jam😭😭

Were your plums ripe? Using ripe fruit is essential when making sugar-free jam. If the plums are ripe, 1 tablespoon of lemon juice over 1 kg of plums won't impact the flavour that much, if at all. It's only useful to thicken the jam, as lemon juice is sort of a "natural pectin", like apples. Thanks for watching anyway, and for sharing your feedback.

@@foodaciously yes it is ripe fruit Do you have any solution for bitter jam to turn in sweeter 🙏 I don't want to waste it. Last year also I wasted jams because of bad taste and this year too... Plz let me know if I can reuse it. I love Plums...

If you still want to make it without sugar, you could try adding maple syrup or a runny honey to it (like Acacia honey). Honey would probably work best (if you are not vegan), as the flavour is a bit more subtle than maple syrup. These two options would work even after the jam has been cooked. To find how much to use, get a big spoon of jam and measure the weight. Then add a little bit of honey (or maple syrup) to it, and measure how much you added. Taste the jam and keep adding until you get the flavour you like. Once you are happy, check how much honey/syrup you used compared to the weight of the big spoonful (find the ratio). Now scale it up to the weight of the remaining jam, keeping the same ratio. By testing on a spoonful first, you still have the option to try other sweeteners on the rest of the jam in case you don't like the result, so that you won't waste it. Next time add apple juice and keep cooking to reduce it. This will definitely make it sweeter. In fact I'm going to do just that today. I'll let you know how it turns out.
