This is by far the best gingerbread cookie dough recipe. Fabulous taste and texture. Will be my go to from now on.

Made these cookies yesterday, I made the dough, my husband and 2 adult daughters rolled, cut and decorated them. This is a very good recipe. We all love the flavor. I just made these and LOVE them! A beautifully soft cookie. They do expand while cooking, but not so much that they deform. The flavor isn't too strong, so no lingering molasses flavor on the tongue like some other recipes. And only lightly sweet. I like how you can add more sweetness with the icing, or just leave them plain for a lighter cookie. These aren't bursting with all the gingerbread flavors, just fyi for those wondering. I LOVE the ones that burst with the flavors, but I also love this more subtle flavor as well.

A pastry cloth and stockinette for the rolling pin are helpful tools for rolling out cookies and pie dough. Less mess from flour and easier counter cleanup. Just try it and you might even consider using it for kneading sticky yeast dough. Pick up the cloth to press and turn. No more dough on the hands!!

I made this recipe last Friday!! I mistook wax paper for parchment and I didn’t know what half an inch looks like. I added a little more spice than called for. Don’t use wax paper like I did. get a Sil-mat or parchment. Cookies turned out great. Hit with my family and the coworker I gave some too.

If you don't have brown sugar. Regular sugar mixed with molasses or maple syrup is same thing! Also, you can skip steps of baking soda and salt if you use self rising flour.

Does you frosting harden enough like royal icing so that they can be stacked?

It will firm up and you will be able to stack them. It just takes a bit of time to dry. :)

You can store it in an air tight container, pressing cling wrap onto the surface. It should be usable a few days later.

I honestly haven’t tried it so I can’t say for sure. It looks like date syrup is a 1 for 1 substitute so it may work. It will definitely change the flavor though. Let me know how it goes

You shouldn’t have any issues freezing them. I would definitely wait a day so the frosting can set. They'll be good for several months. 🙂

I don't generally recommend it. It has a much stronger, more bitter flavor that is not typical of gingerbread cookies.

Is the overall size of the cookies relatively small? That will make them cook faster. Unless your oven is running really hot or your cookies are paper thin I’m not sure why they are cooking so fast, but as long as you can catch it and don’t burn them then all is well. 😊

I've looked as several recipes now and nobody uses sugar. I used pretty much the same recipe and it just wasn't sweet. Why does no one use sugar (white sugar) ?

Brown sugar is made with molasses so we intensify the flavor of the gingerbread by using it, I guess you could use granulated and increase the molasses but going straight to brown sugar is, in my opinion, just the best way of getting the best flavor. I hope this helps. :)
