@@nam6018 I think you should try to use molasses (black treacle) since it gives such a pure gingerbread flavour. Although, maybe you could try corn syrup or a plain sugar syrup (not like palm syrup) and use brown sugar instead of regular sugar maybe?

I made the dough last night and let it chill overnight. I just baked two batches (dark molasses only in this area), so although they are very dark, they are so delicious. I'm sure my son's kinder class will love them. Thank you for this great recipe!

I never use pumpkin pie spice so I'm really not sure how much you would use. I've used 3 1/2 teaspoons combined of the ground ginger, cinnamon, nutmeg and cloves but I'm not sure whether you want to add that much, especially if you are going to add extra ginger. Sorry I can't be of more help.

I have used this recipe for the last 2 years with great success! The only thing I'm consistently confused about is unsulphered molasses. I'm in Canada, and I've only ever seen Fancy Molasses or Cooking Molasses. I think I always end up buying Fancy molasses. Even when I check online, I can't seem to find a source that tells me the difference between these types of molasses'. In any case, I eat these cookies like they are going out of style. So delicious and really easy to make! Thank you!

Christmas Greetings from Canada. I used as you directed, and it was soooo.... easy to follow. I had to add a little more flour as the dough was little soft (I think is the kind of molasses I used). It turn out perfect; I made 2 batches. I used the same dough for the ginger bread house. Thank you for a wonderful recipe.

I made these and forgot to buy molasses so I used equal parts brown sugar and corn syrup plus a splash of spiced rum and they were delicious. Will try to buy molasses next time I make them. Thank you for sharing all these delicious recipes. All of them work in the first try :)

I just made these cookies and they turned out to be perfect! :) I didn't make gingerbread men though, I used some moulds I have whith different shapes. I baked the big ones (size similar to gingerbread men, maybe a bit smaller) for 12 whole minutes, and the smaller ones (about regular British biscuits size), for 10 minutes, and they are so crispy! (I hate chewy cookies...). They only thing is that I used granulated molasses instead of liquid, and I used the same amount (2 cups, firmly packed).

I've never made gingerbread men prior to this year. I now have 7 grandchildren and wanted to make something special for them. While gingerbread cookies leave many options for decoration, I thought these cookies would be a wonderful "labor of love." There were many pitfalls in decorating, which next time I will be more better prepared for the "challenge." All in all my novice decorating skills did in no way diminished the FABULOUS dough recipe. Exceptional flavor, easy to follow recipe. I followed it exactly and have seriously never had a more delicious gingerbread cookie. Thanks Joy!!!

Molasses is unique in taste so I don't know of a substitute. But honey has a similar texture so you could use that, although the taste of the cookies will be different.

Hi steph today I looked up this recipie as I want to try them out this year. Can you please tell me how long they keep so I can baked them ahead and store. Bdw I was reading some of the other followers and people in europe are asking about molasses. If im not mistaken molasses is called treacle. Anyway I have always used treacle when a recipie calls for molasses.hope Ive been some help to the others

+montrealstars60 I live in Istanbul, and they have a kind of grape or mulberry molasses that is found in many countries in the Mediterranean. I would suggest you look for that. In Turkish it is called pekmez, but I suspect there is something similar in Italy.

Molasses has a distinct flavor that’s hard to replace. Honey has about the same consistency so it probably could be used, but the flavor of the cookies would be different.

It is a soft icing. It gets a bit of a crust but it doesn't completely harden. You could use a royal icing on the cookies which dries hard.

Yes, but it would depend on how firm the dough is. If it is too firm to roll, then let it sit on the counter for a few minutes before rolling.

You can freeze these cookies for about a month. I normally freeze them either in a plastic freezer bag or an airtight plastic container.
