Sake is one of the essential ingredients for Japanese cooking and it is very difficult to have exactly the same taste without it :) If sake is not available, how about using white wine?

In this recipe, Chef cleaned the pan to avoid discoloring the vegetables. It will also reduce the amount of the fat, making the dish healthier :)

You can substitute 1 tbsp sake and 1 tsp sugar for 1 tbsp mirin :)

You can use your favorite summer vegetables for this recipe :) For example, bell peppers, eggplants and boiled string bean pods. The bean pods are firm so Chef recommends pre-boiling them.

I just made this today and it's absolutely delicious! I'm mildly allergic to peppers, so I used mushrooms instead though. Also, Maybe I had the heat on too high when I was cooking the vegetables, but the sauce was pretty much all gone by the time I finished cooking the pork. Either that, or maybe my frying pan was a bit too large. Anyway, thank you for this great recipe chef! It's WAY better than eating a frozen pizza.

A lot of the traditional japanese cooking utensils are just useful in general. Cooking chopsticks can be more precise and safe on non-stick surfaces than kitchen tongs, and drop lids are good because so many dishes require they they be covered to simmer.

This dish is very similar to one called pork shogayaki (fried ginger pork) which is very popular among Japanese businessmen. Its cheap, tastes good and is made by many restaurants so its a go to dish for many businessmen who are done work.
