I've seen recipes for Sunday Gravy that are too complicated to attempt, but your recipe shows everything that can be purchased in a regular supermarket (with the exception your homemade tomato sauce). It looks delicious and I know I can do this now myself. Thank you chef!

My grandma taught me to always, always, cook "Sunday" sauce (or Spaghetti Sauce) with pork. It lessens the acidity of the tomatoes and gives the "gravy" a finished flavor. We have tried it with chicken and that is good also, just different flavor. Also use sausage or beef/pork meatballs. All depends on what we have and what we feel like, but pork is our favorite. We would first fry (seasoned cast iron skillet!) whatever meat we were using. EXTRA family tip: make a sort of roux for the "gravy"! Take meat out of frying pan and use one can of tomato paste and garlic to soak up all the little brown bits and pan drippings. BE CAREFUL. Easily burnt and you have to throw away. Start on low heat and work up a little at a time until everything is absorbed. Put it in the pot with the rest of the sauce. Use what spices you like but we only use basil, salt, pepper and tiny bit sugar (level teaspoon for big pot. No onion! I know every Italian/American family have their own cooking traditions. I've always wondered how many other families make the "roux" for their sauce?

I am in love! Since I don't have your homemade sauce, would canned crushed tomatoes or canned tomato sauce be the best match for your sauce? I usually use crushed for my sauce, I like my sauce with a little more body.

Hello, pasquale. Let me first say I am a huge fan of your channel. You remind me so much of my nonna who passed away. Your recipes are so interesting and different from my families. I make them all the time. One thing I was wondering however, was what kind of pork ribs do you use for your Sunday sauce? are they spare? or baby back ribs?
