I rarely have to groom or tack-up/un-tack any skittish horses but I do, I would be extra careful cuz some of the horses at my barn are very cheeky and like to run to the hay bails at the end of the barn. None of the horses at my barn are head shy 🙈 but if so I would be more gentle and carful around their face. But they usually hate their feet being picked especially when their moody or something is bothering them or they just don’t want their feet picked so I leave them be for a while and come back to pick their feet later. I usually un-tack the horses really quick and the will have their lunch/ dinner after I put away the tack and then I give them their food. (The food is to distract them so I can groom them peacefully in their stall) 😅😂
