Chef Petey teaching you how to make the best fried rice in 5 minutes!!!
This video was filmed on one of our last days working at my family restaurant. We ran it from 1972-2017. We were opened 7 days a week for the first 10 years until we expanded to 150 seats from 25. I have always wanted to make cooking videos but never had the time often working 12 hours a day. Now semi- retired and itching to teach others how easy it is to cook Chinese. I hope I can be a source of inspiration to you that you can do it as well.

Beef Fried Rice Recipe
Ingredients:
1/4- 1/2 Cup (59-118ml) Beef (marinate with 1/2 t light say, 1/2 t rice wine, 1/4 t corn starch, 1/4 t oil)
1-2 Eggs (scrambled)
2-3 Cups (0.47- 0.71L) Day old rice
1 Cup (237ml) Bean sprouts
1/2- 1 Teaspoon (2.46- 4.93ml) salt
3-4 Tablespoons (44-59ml) light soy sauce
Dash white pepper powder
Dash Sesame oil
1/4 t (1.23ml) MSG (optional)
1/4 t (1.23ml) Dark soy sauce (optional)
1/2 Cup (118ml) Chopped green onions (optional)
1/4 Cup (59ml) Green peas
1/4 Cup (59ml) Carrot (shredded)
Directions:
1. Heat oil and cook scrambled eggs and set aside
2. Heat oil and put in rice. Stir fry till hot and has no clumps
3. Add in light say, salt, MSG, white pepper powder, sesame oil and dark soy (optional).
4. Mix in eggs and set aside
5. Heat oil and put in beef. Cook till done
6. Mix in bean sprouts, green onions, green peas, carrots
7. Add in rice

That fried rice reminds me of the first time I tried it in Thailand during the Vietnam War and I was at a hotel in Bangkok where the Air Force had some of us staying at until we went to our assigned base. A serviceman who was eating in the dining room was devouring his fried rice and I asked him what it was and he told me. He let me try some of his, and I immediately told the waiter to bring me an order of shrimp fried rice and since then I have been eating it. The dish you made looks great and I have eaten versions from South Korea, Japan, and the Philippines and enjoyed them all even though they was a little different.

Love love this video. Our favorite Chinese restaurant closed and then we moved to Tennessee where you cannot find GOOD Chinese food. I had to learn to make our favorites (Sesame chicken and fried rice) but my rice never tasted like take out fried rice, I even bought the MSG, lol. I was using peanut oil with no ingredient measurements, now I shall try this recipe

great recipe. I've been making egg or chicken fried rice for years that is almost identical to this. My wife probably asks for it 3x a week or more, so whenever I make rice in the cooker for regular dinner, I make a few cups leftover for making her fried rice for lunch the next day (working from home does have it's benefit)

​@@PCISLOT That's actually something that Uncle Roger would praise this man for using. Fried rice technically should be made from old rice, which has the outside as hard and sort of crystallized. As the man explains in the video, this aids in the cooking process as the old rice won't stick to the wok as much as fresh, fluffy rice would and lessening the amount of oil that one would need to use. The too wet or too dry rice means you fucked up only applies to when you make fresh rice. In most households, fried rice is seen more as a way of reviving old rice and making it presentable for eating again than it is as a way of enhancing the rice dish itself. In most cases, it just happens to do both.

Lol same, I'm now going to my local Chinese restaurant to get yangchow friedrice which is good for 6pax for breakfast. And I still can see my penis, I'm currently on a weight loss program, eating in large quantities is fine, just follow a certain program and you'll be good, im doing intermittent fasting, i only eat during the morning 7am to 10am.

I love to watch the chefs cooking my order in the open plan kitchen at my local take away. But they always keep staring back as if they think i dont trust them or something. Always been too afraid to ask for the recipe because of this. Will i get chased out by a cleaver weilding chef? Lol

Yes thank you so much! He has celiacs disease and we haven’t been out to restaurants since him being diagnosed 6 years ago. I really wanted to make him something so he doesn’t feel left out. Of course I substituted for some GF ingredients and it came out amazing! He said it tasted so good he questioned it being GF. This recipe is definitely being saved for future dinners 🙏🏽🙏🏽🙏🏽🙏🏽 thank you again!!

Love your channel, thanks for sharing recipes, techniques and wisdom. I would prefer cooking at home and I will be trying the fried rice meals, we like to use crawfish 🦞 here in Louisiana and I love shrimp, chicken etc. but I prefer brussel sprouts, mushrooms, cauliflower, broccoli, small peas, types of veggies. I’m losing weight and I see you only have to use a minimum of oil so that’s good. Anyway thanks again for sharing your wonderful highly valuable cooking knowledge. that white pepper is key. i generally don't like pepper on food that has its own flavor, but pepper is great with rice and pasta and such.
