Super Easy Eggplant Sambal | Terung Masak Sambal

This spicy sambal dish is a favourite of many! Featuring super soft, almost melt in your mouth eggplant, what's not to love?
It's also very versatile, if you're not a fan of eggplant you can change it up and add anything you like! Some of my faves are tofu and tempeh ✨

Sambal Terung
Serves 2
Paste:
25g dried chilies, soaked in hot water (or mix with fresh red chilies to lessen the heat)
8 red onions
10 cloves garlic
[optional to replicate shrimp paste]
* 1 tbsp fermented bean paste or taucu
* 1/2 sheet seaweed
1/4 - 1/2 cup oil or more
500g or 2 large eggplants
1 yellow onion
1 1/2 tsp salt or to taste
1 tbsp mushroom seasoning
1 tbsp tamarind paste
20g palm sugar
1 cup water or more
Method:
▪️Fry or roast the eggplants until golden and soft.
▪️Blend all the paste ingredients and fry in a lot of oil. Cook until the oil starts to separate, then add the sliced yellow onions and all the seasonings. Add water if the paste starts to dry up.
▪️Once the onion has softened slightly, add the eggplants and stir to combine. Serve hot with rice of your choice.

Sambal Terung
2 orang
Pes:
25g cili kering, rendam dalam air panas (atau campurkan dengan cili merah segar untuk kurang pedas)
8 biji bawang merah
10 ulas bawang putih
[optional untuk ganti belacan]
* 1 sudu besar pes kacang atau taucu yang diperam
* 1/2 helai rumpai laut
1/4 - 1/2 cawan minyak atau lebih
500g atau 2 terung besar
1 biji bawang Holland
1 1/2 sudu kecil garam atau secukup rasa
1 sudu besar perasa cendawan atau serbuk perasa
1 sudu besar pes asam jawa
20g gula melaka
1 cawan air atau lebih
Cara;
▪️Goreng atau panggang terung hingga kekuningan dan lembut.
▪️Kisar semua bahan pes dan goreng dalam minyak yang banyak. Masak sehingga pecah minyak, kemudian masukkan hirisan bawang Holland dan semua bahan perasa. Tambah air jika pes mula kering.
▪️Bila bawang dah layu sedikit, masukkan terung dan kacau hingga sebati. Hidangkan panas dengan nasi.
