A classic Chinese eggplant recipe from Sichuan province. This is one of my all-time fav Chinese vegetable recipes. It's a Chinese eggplant recipe with garlic sauce that's spiked with chilli oil and Sichuan peppercorns. Try it served as is with steamed rice, or as part of a Chinese banquet-style spread.

I am always telling the waiters at an Asian Restaurant here in Zambia, who serve Thai food, that their food should taste like what I see in Marion's recipes 😂😂😂😂 can't wait to try this one out at home!

Cook on your own but the migrants that moved to Zambia cool differently then you would get in china Australia or America. It's probably to cater to your culture since you aren't into spicy. I could be wrong but come here to America I'll make it perfect for you.

I have tried a few of your recipes, and I enjoy getting updates and trying something new. You seem to always pick some of my favorites. Or present something that I know I'm going to love. This is the first time I'm commenting because I was literally blown away by this dish. I had it once in a Szechuan restaurant in New York and have always kind of looked for it. Where is back home? Just wondering . Here in Northern California we just call them eggplants. I’m getting my garden ready for planting and eggplants have a large space as I love them cooked many ways. 🍆

Watched it this morning and off I went to the asian store to get some eggplants. Just made this recipe w opting out the peppercorns because I don't like the taste. Pretty legit. I even partnered it w fried tilapia (no salt) and ended up dipping the meat in the oil. Super good.

I would usually fry the eggplant. Do you find it a bit lacking texture wise? I know it makes it oilier - but the stuff at the restaurant has that beautiful crispy edge on the eggplant which I think gives an added dimension. Keen to try it this way though :) Think I might just add some crunchy garnish like fried crushed cashews

Decades ago, a Thai restaurant I liked had a to die for garlic eggplant. I have been unable to find a recipe for it, but after watching your video, I may be able to modify it to approximate that Thai dish.

Omg so yumm! 😋 I wish I can get hold of your chilli sauce! Steaming the eggplant is also a good technique I wish I have thought of that. As we either boil it or put it in the oven. But will definitely try this technique thanks Marion! ✨

It was hilarious watching my two friends from Sichuan grimace at the video. Apparently they fry the eggplants in. Even in restaurants from what I recall in Chongqing and Chengdu trips.

Great video. I was was actually looking for Thai spicy eggplant but I think I will use this as inspiration as I have some Szechuan peppercorns on hand, as well as most of the other ingredients. I think I may try baking my eggplant though. I don't own a good steamer and I think that method might work.

You can definitely boil eggplant! I do it all the time as a healthier alternative to frying. You have to keep it whole or at least in large chunks though, and cut it up after it's cooled a bit. Some vinegar in the water and making sure it stays submerged helps it stay purple. I'll definitely try steaming it now though.

Please make a list of sauces and spices for your recipes. At least a must have. I really really love your chilli oil recipe. I keep some always. So good. Especially on bland American foods. I don't care for eggplant can I use another squash?

I cant wait to try! Any recommendations on other veggies/protein we can use this sauce with? Over pasta? Something about the numbing fiery sensation just makes me want to pour it over everything!

I think you can use this on any steamed veggies honestly. As a matter of fact, i dipped my fried tilapia (no salt) in the sauce and it was great! It can also top tofu

That was delicious ! I added 1 or 2 tbsp of water because I thought it looked too thick, but it wans't a good idea because the eggplant still render a bit of water when you gently mix them with the sauce. It was delicious nonetheless, but next time I'll be sure not to add any water. Thank you for this recipe!

cutting it thin helps the steam cook it easier. If you cut it too thick, the middle of the eggplant would not be soft and tender as shown but a little firm.

Hi Marion...if I buy bamboo steamer do I need to purchase a separate metal disc to sit the steamer on as it cooks? or can the steamer be set directly into the simmering water? Thanks (can't wait to try this recipe, adore eggplant)

In Chinese restaurants, they actually fry the eggplants but I guess for a healthier choice; steaming will be a better alternative

Aloha, Marion. Thank you for this recipe. I’ve been wanting to cook a spicy aubergine recipe with the lovely local-grown produce available here in Hawaii 🍆 🇺🇸 🇬🇧 Query: I noticed you peeled with a serrated peeler - was this deliberate or will a non-serrated peeler be fine?

I'd guess that the serrations help you keep some of the skin on - you could achieve that with a normal peeler if you wanted I reckon

I love Sichuan peppercorns but I notice you just ground them up whole. How do you prevent it from being gritty if you don't remove the black seeds first? I am trying to learn to like eggplants and this recipe sounds like a winner.
