This is a FASCINATING recipe--I can hardly wait to make it myself! The idea of using salted egg yolks in a dish is novel (to me) and to use curry leaves in an essentially Chinese dish is 'mind-boggling'--so creative! Thank you for opening my mind!

Omg. It was a trifecta recipe. Unusual ingredient (😟 never tried salted egg yolk) science experiment ( watching that salted egg yolk dissolve while heated, wow omg that was facinating) and finished dish. Thank you Chef. Posting this everywhere. Trying this when I either find a salted egg yolk or when I done googling how to make one. Thank you both, and btw you weren't speaking to fast. 😀
