Hi Wendy, I just found your channel upon looking for a fruitcake recipe. Yours looks like the best recipe by far! And oh my.... My fruit that is soaking already tastes SOOOO good! I can't wait to make it! My plan is Roanoke it tonight so that we have it all during the holiday season! Btw, since I found your channel, I can't stop watching it! Thanks Wendy for a great Christmas cake recipe, just made it and it turned out amazing. I soaked the fruits for about 2 weeks prior to baking. Made a couple of adjustments: increased the ingredients to get a bigger cake and mixed the fruits/nuts in flour prior to adding to the cake, to ensure they didn't sink to the bottom. Just one disappointment: try as I might I could not make the caramel - the sugar wouldn't brown and just became a crystallized mess. I ran to Sobey's and picked up a packet of Fancy Molasses and it worked great to give it that rich brown christmas cake colour, yay I was so happy. Thanks again - this one's a keeper and is going into my recipe book for next year :) Merry Christmas to you and your family

Shirley I had the same issue with the caramel, it crystallized rock solid, so I added extra water and put it to boil again,, I cooled it down immediately by placing the pot in cold water . Turned out great

Try dry roasting the sugar in a frypan…keep roasting till it turns golden brown and starts bubbling.Then add desired amount of water.

My oven gives too much of heat and my cake gets burnt fast can I reduce the baking to an hour on 150 will check after an hour if it's not ready will keep it for half an hour pour love the way u showed the putting of parchment paper will try it that way thanks so much for sharing the receipe

For the caramel to be successful don't stir the sugar while boiling then it won't crystalize also clean the edges of the bowl from small pieces of unmelted sugar while boiling by using sprayer of water

I’ve baked these for years and this video is the best I’ve seen explaining the soaking of the fruits and the lining of the tin. I never comment on the sacrilege of unlined tins and bone dry fruits but it annoys me, I just had to congratulate you on the correct and perfect instructions you gave. This recipe looks Amazing!! I’m gonna make this for my mom, who loves fruitcake. I’m going to use dried blueberries in place of the raisins and add slivered almonds and chopped pecans. She was so good at it that she'd bake with cake measurements all stored in her head, leaving us with no written recipe :( Now that she passed away, I wanted to recreate her cake, and was looking for some help on KZbin. So what I did for mine was just basically put in some more water and boiled it until started to bubble. Although it might depend on how much water you put in since it could turn too watery. It would look a bit watery after you take it off the stove, but its going to thicken later when it cools down. I hope this works!😁
