Thanks for the thyme tip, hadn't thought of that one. I usually add a chicken stock cube, I'll try beef next time. A teaspoon of mustard and a small squeeze of tomato puree helps. I find melting your butter and warming the milk together in your saucepan before adding the potatoes, make's for a creamier mash. Some apple wedges fried off in a little butter until just softened, make a great addition! John

I had Bangers and Mash for the first time last night at an American Pub style restaurant in my town. They were AWESOME. The manager asked me if that's what they were supposed to look like. I looked up YOUR video this morning to see and these folks are serving the correct Bangers and Mash. If you ever come to Florida please come to Ocala and go to Horse and Hounds for dinner. Bangers and Mash, I think you'll be amazed. I was raised on German and Polish food and I actually like English food. You guys really rock your cooking!

Hats off to you Adam. I've lost count of the recipies I've seen that cook the sausages seperate from the gravy. I've always believed that a proper sausage & mash requires you to pre-cook/brown sausages, then remove and then return to the gravy for the last 10/15mns for the true tasting gravy.

Yours looks so different and better than mine. Good job. I like mine, but we varied wildly in how we did it. I like the variety that exists and I like that we both mostly used onion gravy, but mine was more of an "alium" gravy, because I used garlic and chives as well.

I actually take a couple of short cuts with my onion gravy, and it still turns out great. I carmelize the onions, though I add a tiny amount (1/8 tsp) of baking soda disolved in water - speeds up the breakdown of inulin to sugar, and the onions caramelize in 20 minutes. (I sprinkly some muscovado sugar over the onions during the last few minutes too.) Once they're carmelize, I deglaze with wine (an inexpensive port, marsala, or madeira works well), then add M+S beef gravy (the one they sell in the fridge case, not the shelf one) and let it all boil together. To that I add worstecer, English mustard, and chopped sage. The result is a top-notch onion gravy!

Yummy! As I have mentioned before: Home-made European food is just great. We do this recipe a lot in Germany (Bratwurst mit Kartoffelpüree und Zwiebelsoße ). However I think there is potential for improvement with respect to the peas. Personally, when preparing vegetable I never let the water boil, but simmer, so for instance delicate peas don't loose their shell and shape. And before serving I glaze them with some melted butter that has been aromatized by finely chopped parsley.
