If the dough is snapping back on you, you can just rest it a few minutes to let it relax a bit.

Also, even with all purpose flour, if you knead the dough a little longer (at least 6 minutes) and use a little bit more water (5 or 10 grams or so) it will be a lot more elastic and easier to work with. It will not stick, even without additional flour if you wet your hands a bit.

I love these Collabs. Such a great concept. Hopefully when the weather gets warmer in the uk you could do a Collab where both you and babatunde do some sort of Collab where you both go for a trek making and taking your food for the day perhaps you could come together and make up a menu so you're both having the same thing.

You soften down the vegetables by frying them up, and during this process they will soften up as you fry them down.

I learned very early on when making onion bread to fry the onions first. The only time I put them in the dough mix raw they leeched their water during the baking process and the bread just remained doughy in the centre

I'm growing a chili pepper that has been crossed with a bell pepper this year, apparntly its still a bit spicy but can be used more like bell peppers in quantity. I'll try and remember this recipe to try them out :)

You can make a fruity bread like this as well using fruit that has been cooked like you cooked all the veg. It's more of a dessert or breakfast bread but it's sooooo good.

I make my own bread and always use the cheapest plain flour I can find. I've found that there's no difference between using that and bread flour, and I save quite a bit of money too. This looks delicious, and as I have home grown onions, peppers and tomatoes this will be even cheaper!

Cheers - yeah, making a decent loaf of bread takes a little care and skill - there's a lot that can go slightly wrong with making big chunk of bread, but making stuff where the bread is in smaller or flatter pieces is just much more forgiving - even if you mess it up, it will probably still be OK

That looks fantastic, great job. I've been getting into home made bread lately especially flatbread found a great simple one that uses just butter, milk (we use soya) and plain flour. I'm definitely going to give your one a go 👍

when i work with a stickier dough, I use a cheap plaster scraper from the hardware shop (the largest one I can find) to kneed it on a wooden benchtop, its a nice way to kneed dough without having to add any more flour

I'm going to try this! Instead of going spicy, I think I'll go herby and perhaps mix the herbs in with the flour and yeast. I think I'll also go a bit finer with the filling and fry in some mince. I think that would go amazingly with the bacon and lentil soup I made earlier. 😋

I'd love to try that but if splitting the dough in half to make it easier to handle, maybe fill one half with a vegetable mixture and one with strips of steak like a beef Wellington or with cheese to compliment the pepper/tomato/onion mix. I make a roasted veg mix from aubergine, courgette, onion peppers and mushrooms that is great hot or cold and i think that would work brilliantly in this. Inspiring recipe, thanks!

after knocking it back, if you allow it to rest for 3-5 mins it will relax the gluten making it possible and easier to roll out into the desired shape and depth. This looks delicious! will be trying it next time we have guests over :)

I need to try this, might try it with some kind of meat and cheese though, my stomach doesn’t handle peppers well Edit, just had an idea, I wonder if this would work with breakfast sausage, cheese, and hash brown (instead of the pepper/tomato filling) as a kind of breakfast food I’m sure you could make all kinds of different foods with this basic concept really

I had one of my periodical bread making sessions last week. A batch of garlic and rosemary wholemeal rolls and a couple of plain white loaves with onion seeds on the top. Such a simple and rewarding thing to do, especially if you have, like I did, access to a restaurant kitchen and al the fancy kit that was in it. No kneading for me when there's a giant machine to do it for me and a steam oven to get the crustiness on.
