Since taste is subjective, different people may like or dislike his food. What's really admirable is their hard work, dedication, organized kitchen, resourcefulness, quiet operation. They make their own condiments, they reuse empty cans as containers for condiments and ingredients. Very organized, very efficient.... excellent.

*His method in one scoop with all ingredients: salt/sugar/msg/pepper/etc is just xxxx good:)* It\s xxx hard working as owner + chef cook same time in the Kitchen^^ I use to work in a chinese restaurant when I was young in the Kitchen as part time^^... Chinese Cuisines are xxx complicated.... The most Time Consuming are the preparations: Making authentic Sauce etc etc... But at least I can say: I had a great youth growing up..... Japanese Soba & Sushi Cuisines are high Level but making Authentic Chinese Cuisines for Local people in Japan or even World Wide is just another Level! In the Kitchen you need 2be Flexible/Hard Working/working Alone or in a Team....
