Thank you for the recipe. I would prefer to stir the fermented beans first with the onions before add in water. Fragrance of fermented beans will really come out 😊

Roland & Jamie, thanks again for the recipe. I still haven't acquired the bitter taste of bitter gourd. It looked like that you didn't even salt the gourd slices prior to deep frying. Should I salt them if I want the gourd to be less bitter? Please advise. Have a great weekend, guys.

Yes salt them & leave it for sometime, they will be less bitter. Also if u want to bring out d real umami taste of bittergourd check out any Indian cooking chnl, they make it with crushed fried onions stuffed in bitter gourd, even I started liking bitter gourd some years back
