One of my favourite Chinese take-out dishes of all time, and good timing too. I just found out my favourite places to get it closed down a year ago. Looking forward to trying my hand at this at home.

I haven't watched the video yet, but when I saw the fermented black beans during the introduction of the ingredients I knew then this is an authentic Cantonese beef with bitter gourds dishes. The Cantonese fermented black beans are the main ingredient that perfumes the dishes so delicious. 👍👍👍 I have finished watching the video and this is what I called authentic Cantonese cooking, what's more, beef with bitter gourds is a Cantonese dish. Thank you for sharing, my friend.

Yes, we cantonese used salted fermented black beans very often in our daily cooking. Specially when making steam pork short ribs. They gave and add unique tasty to food. Thanks for watching. BTW, check my other videos that uses fermented black beans.

Love this dish! Thanks for an easy to follow recipe! My mom used to soak the bitter melon to make it less bitter! But I told her I love the taste of bitter melon! Haha!

My grandma made a lot of dishes with bitter gourd. I know it's not popular, but I really love stir fried eggs with bitter gourd or bitter gourd with tofu. I don't eat much beef, so I hope I can use other proteins if that's okay. Thank you Chef! Love your food! They remind me of my grandma's homecooking

Hey Chef. This looks good. Is it the same as bitter melon? Since it is bitter, do you recommend adding sugar on it before stir frying? Thanks again.

Yes , that is another word for this gourd. Just follow my cooking video. And If you like to diminish some bitterness taste, you can rub plenty of salt to inner part of it after cutting out the core. Rinse with running water after an hour. Then drain to dry before using. Thanks for asking. Thanks for watching.
