Betty Crocker canned frosting instead of the sweetened condensed milk also works and there are many flavors 👍🏻 I love to get a can of chocolate frosting and do creamy PB instead of chocolate chips. It’s delicious.

To keep your paper from moving, use a light mist of vegetable spray at the bottom of your pan first. the paper will stay put when you spread ingredients in your pan

Adding butter to white chocolate instead of coconut oil for example is why it didn't set enough. Also, I've noticed repeatedly that you add flavorings or other ingredients that contain water in them that cause your fudge to seize as you mix. If you use flavoring designed for candy making that has an alcohol base this won't happen. This also is true for colorings. Gel based coloring prevent this. You can get them when that go on sale at hobby lobby. *Milk based ingredients also have water. Hope this helps.

Before I see the end results I’m thinking that you guys may end up preferring the fudge with the chocolate chips you usually use because that is what you’re palette is used to and have come to love. I also noticed that the Hershey chocolate chips were milk chocolate, whereas the others were semi sweet. Might make a difference in preference.

Lol I have never myself owned a wooden spoon or a wooded cutting board and I have non stick pans too. I use metal everything on. I have never wanted to use the wooden because it is so porous and I can't even imagine the germs that can easily get imbedded in them. They also can splinter. I have used my same metal spoons for 55 yrs never replacing them and yet I know so many who have to replace their wooden ones on a regular basis. Plus I see a lot of food wasted because the bowls don't most of the time get scraped as well with wooden. I know I am the odd man out in this but never have had any trouble using metal in my whole 60 plus years of cooking. Bottom line there are pros and cons to each.

Put a little cooking oil, or what ever one uses on a paper towel and rub on both sides of the blade to keep the fudge from sticking to the blade. Justva little tip 👍🏻😊✌🏻

I also use Walmarts chips. I make a lot of fudge. I use the fantasy fudge recipe from Krafts. Always worked great.

Nestles white chips can still be used for fudge, however, you need to use 1 1/2 to 2 packs of chips per can of condensed milk. This is the same for any white chocolate. I have also had this happen to me one time with a semi-sweet chips also.

When doing white chocolate fudges, I always cut back on the Sweetened Condenced milk. There's more wax in the dark chocolates types, and they hold up better.

Thank you for doing the taste test. For fairness, I want all the variables the same except the chocolate chip brand. I went back and looked-all the chocolate chips were semi-sweet except Hershey was milk chocolate. I make a stovetop fudge like you demonstrated your Great Grandmother’s recipe a few weeks ago. The recipe I use doesn’t cook the 1 c butter with the sugar and condensed milk and it uses 4-1/2 c sugar instead of 4 c in your Great Grandmother’s recipe. It includes marshmallow fluff and vanilla. BTW, everyone loves it and I mostly use Toll House Semi-Sweet or Milk Chocolate chips or a bag of each.

Regarding white chocolate. I made the nougat candy with the dots yesterday. I bought one bag Ghirardelli and one great value. I used both in the recipe, thinking the more expensive brand would be better but for cost saving measures, “dilute it with the cheaper”. I can tell u I tasted nothing morsels before making. The Ghirardelli was dry like. Not that creaminess when I put it in my mouth. The great value was creamier and had a much more superior vanilla like flavor. Now I know I don’t have to spend more

Not trying to pick a fight, unless you pay me off in fudge, but a form of the internet (which was initially called the Ethernet) did exist more than 30 years ago it just wasn't what it is today. I worked for a major corporation and we used the Ethernet/ internet back then. Of course technology took off and it became a much more complicated thing as time went by..

It’s because the white chocolate chip you are using do not have any chocolate in them. There is no cocoa powder in them a true white chocolate you would need to get the white chocolate wafers that have cocoa in it . If you look on the package ingredients it says that it is a flavor, not true white chocolate .
