I use buckwheat as a cover crop in my garden, it crowds out weeds and draws bees while enriching the soil with nitrogen. I’m going to start cooking with it though after watching your video, thanks for the ideas!

We're a family where everyone is either from Eastern Europe, or our parents are - so Buckwheat is a normal part of our diet. They're tasty and easy to use. Some friends started using it when we told them to try using Buckwheat in dishes they normally use Barley for and now they are hooked. Luckily we've a tonne of Eastern European grocery stores around us, so getting it is easy and cheap. Kasha Varnishkes is our go-to - but lately we've been making what my mum called "Shtetl Pilaf" - an easy, veggie (and sometimes meat) Pilaf using Buckwheat. Again - TRY IT. It's NOT like any other seed/grain, and it's addictive!

Very informative, thank you! In the past, I eat buckwheat in all-buckwheat pasta noodles, pancakes and a lovely crispy cereal because I try to stay gluten-free. But I will endeavor to use more groats in cooking as a substitute or alternate to brown rice.

It would be good to explain about raw and roasted buckwheat. I find commercially roasted buckwheat over-roasted (two times the amount of water can turn it to mush) and prefer to roast the raw grain more lightly in a dry iron skillet. Home-roasted buckwheat that's been cooled and mixed with a beaten egg can be simmered in chicken broth with a little olive oil and dill for a rich grain dish. A staple in macrobiotic cooking, it's also delicious combined with sauteed onions and other vegetables.

I don't know why I never tried all these grains before but I am eating them now. Just got some buckwheat and can think of many things to do with them already. I made veggie burgers with wheat grains and they turned out great and provided a great chewy texture. Going to try that with the buckwheat. Salad bowls, soups, sides. Can't wait to experiment. The whole low carb and keto craze kept me away from these great foods. Not anymore!

Thank you, I didn't know that about buckwheat. We have many indigenous buckwheats here in California, but I see now that they are a different genus. And BTW, you say related to rhubarb and sorrel. So then, is buckwheat, its groats, loaded with oxalates? Or high only in the leaves like the rhubarb. It so, you should also provide a warning, especially for kidney patients.

@@birage9885 High oxalate foods can and do precipitate gallbladder and kidney calculi. Anyone who as has passed a kidney stone will take caution. Blanching/boiling veggies and greens reduces oxalates by 50-80%. Always drain the water. Grains, pulses rehydrated first then boiled lowers oxalates, but if the water is soaked in by the grain, it seems to me, the oxalates are not removed but diluted. My suggestion is to boil for a few minutes, drain, then add hot water and finish boiling.
