The reason you can't change jobs is due to your weapon. Each job can only use one weapon type, so changing the weapon is changing the job more than changing the actual job stone is. It's weird, I know, but it was done to be more user friendly before they added even more user friendly methods, like pressing a single button to change jobs. By the time you read this, you've probably already figured this out though.

All of the instanced fights in this video were re-worked sometime last year with better mechanics - most of these fights weren't built with the current gear curve in mind, and the developers have gotten a lot of practice with fight design and communicating what's happening in the fight. These were all endgame fights at one point! It all now provides tomestones for old best-in-slot gear, which will get you a fair way into the next expansion, and every expansion has Rowena or one of her henchwomen with equipment available for a price. One thing FFXIV does really well is scale down its endgame in each expansion to become levelling content; there's even raids available, and they still regularly get run (although Coils of Bahamut isn't in the roulette, and is generally tackled in the Party Finder.) The reason you couldn't equip your new scholar stone, or use any of your gear, is because your book is for summoner specifically. Your weapon determines what job you are, and for most jobs this is straightforward, but after level 30 books start being either summoner-specific or scholar-specific.

Gysahl greens for your chocobo can be found at multiple vendors all over the place for pretty cheap. One of the vendors near the Gridania main aetheryte will have them. If you check the weapon you bought, it is limited to ACN SMN. You need a book that has the base class ACN that also allows SCH. ACN is the only class that can split into two different jobs, so it can have weirdness with that. Since one job is dps and the other healer, the books will often be limited to just one of the jobs so it can have appropriate stats.

The reason you had issues at the end is the weapon you had equipped was Archanist/Summoner specific. You’ll need to find a weapon (probably level 30 or lower) equitable by both or something scholar specific.

Jobs are based on weapon you have equipped. You can have gear sets saved, button is right above your weapon slot in character menu. Use rotating arrow button to save current gear to your gear set (upper right of character menu). The "blue man" button you can use to quickly equip gear/weapon best suited for current job.
