सुरळीची वडी । खांडवी recipe

Ingredients :
1 cup -(Besan)Chickpea flour or gram flour | बेसन
2 cup - Buttermilk | ताक
1 tbsp - आले लसूण पेस्ट। Ginger Garlic pastes
1/2 tbsp- हळद ।Turmeric Powder
¼ cup - Shredded Coconut | नारळाचा किस,
¼ cup - coriander leaves । कोथिंबीर,
Curry leaves । कढिपत्ता,
1 pinch - हिंग । asafoetida
4 tbsp - Oil
*For 3-4 servings.
Method:
Prepare mixture:
Take 1 cup Chickpea flour,
& add 1tbsp Ginger Garlic paste then
Add ½ tbsp Turmeric,
Add ½ tbsp Salt to taste,
Mix it well.
Take a nonstick pan.
Put gas on medium flame for 2 minutes.
Add prepared mixture directly into the pan and don't use oil.
Then keep gas on low flame.
Keep staring until the mixture gets cooked.
Switch off the gas.
Take a plane surface spread the mixture
Sprinkle shredded coconut coriander & half Lime juice.
Cut it evenly at about one inch & roll it.
Place it onto a plate &
Add Tadaka ,
For Tadka:
Take a Tadka Pan,
Add 4 tbsp oil,
After oil gets heated,
Add 1 tbsp Mustard seeds,
1 pinch Asafetida,
8-10 curry leaves.
Tadka is ready
Garnish with shredded coconut & coriander.
Your Suralichi vadi / Khandvi is ready.
*Self life 1 Day.
*Tips :
Don't use a normal pan, only use a nonstick pan.
Continuously keep staring until it gets cooked.
Don't use oil on whichever surface or plate you are using.
If the mixture gets overcooked don't worry grind it in the mixer , cook it for some time again and do the same process.
You can cook in a rice cooker as well.
१) निँनस्टिक पँन वापरावा.
२) संपूर्ण शिजेपर्यंत सतत ढवळत राहावे.
३) ताटावर तेल लावू नये.
४) मिश्रण शिजून ज्यास्त घट्ट झाल्यास मिक्सर मध्ये बारीक करून पुन्हा करू शकता.
५) कुकर मध्ये ३-४ शिट्टी देऊन तुम्ही हीच वडी करू शकता.
