I think he said in another video that he's lucky if he gets one tip a day. Most people don't carry cash these days either, so that narrows it down even further. Deliveroo only allow customers to tip before delivery, and cash tips at the point of delivery. It's a flawed system because most people aren't going to tip before they're happy with the service. It also doesn't factor in tips for the low paid staff making the food.

7:05 let me start by saying that I'm sorry to hear of your experience there. When I was younger, I worked as a waiter in a Chinese restaurant. I was thankful that at least the owners were nice people, but being of Chinese descent myself, I frequently visit other Chinese restaurants where I - as a paying customer - had heard some abuse coming from the kitchen. I was not impressed at all. They may know how to make money, but their people management skills left a lot to be desired. I guarantee that not everyone is like that, though. You do get some terrific people to work for. Nevertheless, I guess it can't beat working for yourself!
