More than thirty years ago today, a beautiful baby boy was born in a small village in southern Russia. His mother named him Boris, which means "fighter," but to me he is more of a lover than a fighter.
He is perfect with his brown hair and little freckles.
He grew up loving culture, tradition, art and most of all his family and friends.
For lunch, I am going to make one of his favorite dishes, borscht. Here in the Philippines, we have only had borscht once in a year and a half. Because red beets are not easy to find and they are very expensive.
Borscht is a sour soup made with meat broth and vegetables: potatoes, peppers, celery, onions, garlic, cabbage, carrots with legs (I'm kidding, you can use regular carrots) and beans. Red beets are one of the main ingredients that give the dish its distinctive red color.
Salt, tomato sauce and black pepper are also needed for seasoning.
Boris grew up eating this dish. And he told me that the best borscht he ever had was made by his grandmother.
Surprisingly, he said that my borscht is also very good. I didn't get a chance to meet his grandmother, but he is sure that she would be proud of his wife.
I also baked bread for the borscht. We don't have an oven yet and when mom lived with us in the Philippines, she learned to bake bread in a pan. I quickly mastered this skill as well.
