Conch is delicious. It tastes a lot like scallops. You typically deal with the chewiness by either dicing it up with sweet pepper, onion, tomato and lemon juice (there's also some sweeter recipes with pineapple) OR by dicing it up and mixing it with batter that you fry into fritters. Delish!
