Dear Sonny, The past few years I have been through so much hell that it almost took me out , I was a full blown alcoholic and suffered with severe depression and anxiety. You and your amazing crew have created soul healing entertainment that has a strong ability to wash away daily stress and depression. Watching your show has helped me get through some of my darkest days and I just wanted to say thank you for everything you do. Now I'm sober, I went to rehab for a year and I'm getting the help I needed for so long. My life has transformed into something beautiful and I am finally someone I recognize and love again. Thank you again for being so darn amazing and helping people like me escape from the hell that plagues us and life destroying depression, you have a magic about you that has pulled me through a lot. Nice play with that change of heart card and she had no Ash for the counter and you broke her down a bit on some of the ish to eat. I grew up on a farm so cheap cuts of the animals was a staple every weekend. Liver and onions was a family Sunday dinner night get together with the night ending with games of sheepshead for money. This channel is SERIOUSLY under-rated, Its literally one of the best thing to watch anywhere. Kay is incredible, she is nice to watch and the two work especially well together, a good team. The whole series is interesting/educational/funny, i don't think it could get much better. Also Sonny is so natural in front of the camera he's fantastic to watch. Obviously the production/camerawork is top notch. You should all be incredibly proud. 10/10

Underrated would mean he’s not receiving the recognition or views that he’s supposed to based on quality and great reviews…he has 10 million subscribers… has much respect and has given much respect from and to other cultures… and his work is definitely recognized and enjoyed…going mainstream like television could possibly hurt his brand based on the fact that everyone streams and a great deal of us enjoy his videos… he even has sponsorships for his videos…he’s not underrated…

I am proud of my roots, my dad side is Mexican but born in the philippines due to colonisation of Spanish took Mexican prisoner to the philippines and so my genes is a mix of Spanish and Mexican born and raise in philippines. 😊

I'll be honest, despite seeing all the previous parts that make up this episode before, like 50% of my motivation for re-watching this is the host chemistry between Kay and Sonny. Watching these two interact, and Kay growing as a foodie is a real treat.

I've wanted to see this show since the Yucatan clips started hitting the interwebs. One thing I didn't realize until I was around a lot of Mexican, South American, and African folks was the purpose for there spicy food. I grew up in rural Indiana (shut up, I know 😆) and there virtually nothing here aside from the basic fast food or chain restaurants. But my family did have the privilege of going on vacation annually, usually to the gulf in Florida, Las Vegas, or South Carolina (around Foley Beach.) I fell in love with seafood which was a real shame being stuck in a fucking corn/soybean sanctuary aside from my 8 day vacations each year. Anyway, when I was 21/22, my wife and I moved to Houston. We made tons of friends from everywhere you could imagine. I had friends from Cuba, Paraguay, Peru, Australia, Germany, Vietnam, Mexico (obviously), Chad, Niger, Kenya, Cameroon, Crimea, Czech Republic, Dubai, India and lots of other places. I was introduced to a bunch of different cultures which felt far more valuable to me than the years I spent in college. But the one thing I noticed from everyone I met was this general rule with food: The hotter the average climate a culture has to deal with, the spicier the food typically is. When I asked a few people, they couldn't really give me much of an answer as to "why" that was. But when I met a buddy from Cameroon, he told me that he asked the same question to other Africans. Since his village was more temperate, he wasn't a huge fan of spicy food. But when he moved a bit more North and inland, the food got a lot hotter. Apparently, spicy food is a kind of natural immunity to the climate. If you live in a really hot area, eating spicy food makes the actual heat less intense. My wife and I had made friends in our apartment complex with a lady and her husband (a few years older than us) who were from Kenya. She would babysit our infant son when we were at work, and she would regularly make us food if she was making one of her family's recipes. She knew that we loved trying new foods and it doesn't get much different from rural Indiana and Kenya. She made the most amazing but absolutely ridiculously spicy food I've ever touched. I brought some to work and a couple of my friends that claimed to "love spicy food" tapped out almost immediately. I thought she was just fucking with me so I had asked her if Joe (her husband) liked that insanely hot sauce. He rounded the corner with a damned leg bone dripping with the same ghost pepper sauce that had us crying bad he was just lapping it up like it was ranch dressing. Even when his eyes were red and he was sweating profusely, it didn't even seem to faze him in the slightest. The hotter the climate, the spicier the food... Because it keeps you from dying 😆

I would like to add that people in warm climates down south put more different spices & herbs (besides chili peppers) in their food to preserve it from spoilage. The idea is that these spices and herbs in the wild have anti fungal/ anti bacterial properties and that they taste very bad for other animals besides humans. In countries with long cold winters like Germany/ Central Europe, Northern Europe, Russia, Central Asia, northern half of Japan, and South Korea they tend to make fermented foods instead like sauerkraut, kefir, surströmming, beer, and kimchi. As a side note, the Koreans recently started adding spicy peppers into their foods in the early 1960’s after the Korean War ended as a result of some American diaspora, as well as a lot of sugar and processed food in their diet.

I just think it's really important to understand how/why other cultures operate the way they do because we can distinguish between "good/bad," "better/worse," and simply different. There definitely weren't any "bad" days when I got to try all the other foods/customs my friends brought for me. But working in an enclosed fabrication warehouse beside 2000°F natural gas furnaces and a galvanizing facility in Houston during the summer DEFINITELY taught me to appreciate spicy foods for their utility 😆

Merida is hands down my favorite part of Mexico. The Yucateca are the most warm and welcoming people I've ever met, and the best cooks. Oaxaca is a very close second and is far less hot and humid

@@jaredneilsen well isn't everything corn and super fat meat plus beans and potatoes, fresh vegetables are hard to get and well if you like corn, I find it disgusting .. well this is why I eat Thai cuisine it is a lot better :)

@@WojciechKalka I Not like corn or beans either, though I think corn derived tacos are nutritionally better than processed wheat (as far as I know). I haven’t been to Thailand (yet) but would agree Thai and other south/ eastern Asian places are probably the most complex and delicious to be found anywhere…

Sunni, you should ask Young Bloods the you tube guys from Australia to go out with them on one of their boating trips. They catch loads of seafood and cook it right on the boat or on a little Island.I know its totally different than your usual but it would be a great video with education on sea life.

i love seeing the diversity of food from mexico. from native american cuisines to mixed with european and other cultures of people who migrated there or in some sad cases enslaved there(as it was in lots of the americas)

I am so fascinated with the underground cooking method. I would think all the dirt on top would smother the fire out. I want to try meat cooked that way so bad. I’ve been to the Yucatán once before & it was lovely. I hope to go back.

The hole is usually lined with brick or stones. Logs are added and burned until only the embers are left. It's topped with a metal lid then covered, leaving it to cook with just the heat.

White glowing coal means it's at its hottest point. You can't kill that process anymore except for with water or a total enclosure. And even then. It's sucking in some oxygen probably. Do you know how traditional coal is made? Similar procedure out in the center of the forest. And the good thing is the crazy hot heat is not lost to the air or to the thermodynamics of the air but it's kept around in the dirt. How else would you get such a soft well done meat without charring it?! The heat just travels through it and still sticks around. What other method could do that? Also it's not bad to have a dying down fire from the white glow level. It's at maximum, slowly dies down but stays around because of the surrounding dense matter. It's putting the most love into food heating wise.
