I don’t believe you reshuffle the cards into the deck for the next rounds. They are discarded.

From the rules in the 'Ending a round' section: "All cards, except for played dessert cards, are then collected and re-shuffled together." I think the original game told you not to reshuffle the cards, but for the higher player counts that Sushi Go Party supports there just aren't enough cards.

Greg Meredith he is shuffling the fruit cards which aren’t all the same, all the other desserts are exactly the same though

Yeah, me too. I have yet to find a video that clearly explains the game. Probably best to just find a group that knows how to play it and play it with them a few rounds.
