We were recently in Japan. We experienced that it's a bit difficult to make reservations at great restaurants. It's because they are either close on the day we were there, challenging location, conflicting business hours and our schedule or language barrier. We were fortunate enough that Chef accommodated us. We got the last 2 seats. It was meant to be. We experienced the BEST OMAKASE during our trip. We even went to a Michelin star chef in Tokyo. I wish Chef Shiba-san will get his Michelin star someday. You're the hidden jewel of Takayama. Mabuhay, Chef!!!
