+khaled koko I am guessing it is just the dehydrated sauce that you add milk to and let it boil up. This is why there is no recipe, but originally you fry the meatballs in a pan and then just add heavy cream and milk to it once all the meatballs have been fried. S&P love and strain it and serv.

Brown sauce: Add a good chunk of butter to whatever metal thingy you cooked the meatballs in (don't wash the metal thingy, leave all the meat juices and scraps in there!). Let it melt and then add a couple of table spoons of plain white flower. Stir until everything is combined. Now the base of the brown sauce has been made. Add 200 ml of beef stock slowly and stir vigorously until it thickens. Add a dash of cream and some brown food colouring (food colouring is optional but in some parts of Scandinavia very traditional). Add freshly ground black pepper and salt to taste (probably wont need much salt as the beef stock usually is very salty). Cook until sauce has the consistency you want. Enjoy!

I actually love the way you complete eachother's sentences in two different mother tongues and both understand eachother perfectly. And I am amazed by how fast you've learned Swedish. My boyfriend (who's British) actually made it into a challenge and made it for me on Valentine's inspired by this video. And it was yum. :)

I'm currently in Sweden visiting my mother's family, and this video just made my heart so warm. Every Swedish woman has her own little recipe for köttbullar och potatis, and it was so lovely to see this beautiful lady's! Though it's all the same basics, there are of course little familial twists to add here and there. Like my mum cooks hers on the stovetop instead of the oven, and she definitely adds lots of cream with the mashed potatoes to make them lumpless. Lingon is an absolute must, though! And the gravy. Oh BOY THE GRAVY. Your Swedish is pretty lovely Donal! You know more than my dad did/does when he married my mum. He just knows "Jag vill ha en glas vit vin/öl, snälla." Which is all you need, really. I'm just so happy in my heart-place, it's a nice feeling. All these Swedish videos make me so proud in a very odd sort of way! Tack ska du ha!

Rick A make the gravy in the pan you made the meat in. Pour off some of the meat juice if there is lots add flour and stir it up to pick up all the little bits of meat and things. Turn on the element and add some water(a few cups maybe like 2 or 3 depends on how much you want) then keep it on the heat till it thickens. Salt and pepper. If it's pale or bland add some soy sauce and/or vegemite they'll help. Dont panic if the flour lumps just whisk it , and if it isn't thickening add some corn flour(like a teaspoon) I feel like I should add that swedish people often have brown sauce(just gravy with cream)

You start with butter and flour in a pan, you're looking for a cookie dough consistency. The runnier the dough the lighter the sauce. Then you take ox/calf or regular meat stock and pour it in until you get it funnier than you would want it, because you're going to boil it so that the flavor enhances and you get a thicker sauce. You want the sauce "medium" (lagom - Swedish word) runny and thick at the same time. Less thick than white sauce but not as funny as melted butter. Try and fail, try and try again! (This is only the base, people put their own twists on it. Some use more stock to enhances the meat flavor of the sauce and some even put in a bit of soy for more salty flavor.) hope you found this helpful!

I usually have boiled potatoes and a bit of allspice in my meatballs, and I only fry them in a pan, not in the oven. Then if you want to, you can just deglaze the pan with a bit of white wine, add some soysauce and worchester shire sauce, and some cream, then reduce it for a while. I also like to eat my meatballs with stewed macaroni.

Funny ingredients used are the same as we do in Spain. We make the sauce with fresh veggies and process it, and I fry the meatballs, in olive oil (instead of the oven), with flour and beaten egg, and then boil them for 5 minutes in the sauce,..... Wow, what a wonderful video, such warmth! As a swede, it’s always interesting to see a foreigner learn to actually make Swedish food (just like I like to learn how to make non-swedish food). And homemade meatballs are so different from the factory made ones that you can buy. There are lots of variations on how to make Swedish meatballs. Some use boiled potatoes instead of bread, some use fresh bread, some use stale, some chop their onion, some grate it and some fry it before adding it to the ground meat. The way I learnt from my mother is to let breadcrumbs soak in milk and egg to get all that moisture in there. I season with salt, pepper, ground cumin and a pinch of chili, and I grate my onion. If you use a food processor (and do it right) you can get a very tender, almost veal-like meat dough. If you get it wrong it can have a kind of stringy texture but still taste the same. I usually fry my meatballs in a pan, or just sear them and let them cook through in the oven. To bake them in the oven is also fine but it doesn’t give them the same crust. It’s all a matter of preference. It’s also very common to serve meatballs with boiled potatoes and the brown sause (gräddsås) or with “stuvade makaroner”, a dish with mac’n’cheese-like consistency but with a sweet béchamel (or the cheat version where you boil the macaroni in milk). Donal Skehan if I were to do meatballs for a video I would probably do them in the oven too. It's hard to make them look deliciously golden and round (as Gunvor's in your video) when you fry them. They always end up uneven in colour and lose their shape (unless you have to little fluid in them, but then they are kind of stale). Gunvor is a wise woman :)

I haven't seen this before! My grandma (and now my mom) made hers with half minced beaf, and half minced veal, and then she lets it simmer in the brown sauce. Also a very delicious way of making it. And my mom's Swedish, and dad's English, though dad came to live here in Sweden rather than the other way around as you did! ;)
