This Cualiflower Purée with a Cauliflower and Pomelo salad and a Yuzu dressing with Maple Sirup was one of the dishes in an amazing 11-course menu I recently had. The menu was cooked by my dear friend Eddi Dimant from Mochi in Vienna and it was fantastic. This was one of the dishes that stood out most to me and I knew straight away that I just had to cook this for you. The sweetness and creamy ness of the Cauliflower Purée, mixed with the freshness of Pomelo and Yuzu, the crunchiness of the raw Cauliflower and the subtle sweetness of the Maple Sirup makes this dish a clear winner.
