These Ponzu marinated Tomatoes with Nori Tsukudani were a revelation the first time I tried them. Not so much because of the Ponzu marinated Tomatoes, but much kore because of the Nori Tsukudani. Nori Tsukudani is the most potent Umami bomb I have ever tried, and in contrast to Garum and the likes, it actually tastes good. It keeps well in the fridge, a couple of weeks, and it's very versatile in its use. Add it to some rice or to a "Cup of Noodles" and you will have elevated that from average to top level gastronomy. Something you just have to have in your fridge 👍

Great recipe and simple, Christian, totally in my taste! Japanese tastes through the KZbin screen! Although it is is bit cross-over Japanese-Italian as you say. Ponzu is king in my kitchen. Great fun! I would not hesitate to add some shio kombu on top to add saltiness, or even some melted salty anchovies, but you need to keep the balance then. Many things one can do with this. Personally I would eat with a bowl of rice on the side, but that is just me. Looking forward to more episodes! Cheers the now.
