Love the Costco Sweet Kale salad but want to grow most of the ingredients yourself? Or just recreate it at home from store ingredients where you have more control over what goes into it (no refined sugar, no soy or canola oil)? I gave this copycat recipe a try and it turned out delicious!
Sweet Kale Salad
Adapted from "Costco Kale Salad Copycat Recipe" on Perry’s Plate blog
Makes about 8 large servings
8 ounces of kale, leaves removed from stems and thinly sliced (about 1 bunch)
1/2 of a small head of cabbage, cored and shredded (I used red)
1 lb of Brussels sprouts, trimmed and shredded (optional - if skipping, just use more cabbage)
1 lb broccoli chopped fine (I used Chinese sprouting broccoli)
1 bunch arugula or curly endive
dried cranberries
pepitas (pumpkin seeds)
For the dressing:
1/4 cup neutral oil of your choice (I used olive)
3 Tablespoons apple cider vinegar
2 Tablespoons freshly squeezed orange juice (I used an orange syrup I had on hand)
1 1/2 Tablespoons honey
1 Tablespoon freshly squeezed lemon juice
1 teaspoon poppy seeds
1/2 teaspoon sea salt
1/4 teaspoon onion powder
2 tbsp mayonnaise (optional - helps it stay emulsified)
Combine all veg in a large salad bowl.
In separate bowl, mix all of the dressing ingredients together. Whisk until well combined. Dress each individual salad with about 2 tbsp dressing. Top with dried cranberries and pepitas. Serve.
