Fresh Sweet purple potato is a great friend to the Hokkaido milk buns. I have been making them for my little boy. The meat of the sweet purple potatoes makes the bread Fluffy and moist. Semi sweet bread.
Ingredients:
2 cup bread flour / all purpose flour
1tsp + 1/4tsp active dry yeast
3/4tsp salt
4tbsp granulated sugar
200g-210g sweet purple yam(potato)
2tbsp unsalted butter
1 egg
100gram whole milk (close to 1/2 cup)
1/4tsp ube extract (optional) - it helps maintain the rich purple color
Egg wash
Roasted sesames seeds (optional)
Baking pan, 9'x11'
