SWEET & SPICY RED MANGO 🇹🇹 (#53)

A true Trini delicacy and a must try!
Sweet, spicy and oh so savory!
I remember the days when sometimes I would go to Tobago just to buy this :)

INGREDIENTS
2 -3 green mango (cut into slices along with seed)
1 hot pepper ( scotch bonnet / scorpion)
5-6 cups water
2 cinnamon sticks
2 bay leaves
2 cloves
1 /2 teaspoon salt
1/2 cup brown sugar (if you have a really sweet tooth, then use 1 cup sugar)
1/2 to 1 teaspoon red food colouring (if using powder). OR IF USING LIQUID DROPS THEN ADD ABOUT 10- 15 DROPS

Sounds good! I had the mango brought up from trinidad...my dad cut it up ...i had to place in the freezer ...i believe i made this in the middle of winter here in canada...but fresh is best!🙂

Ok I’m from princes town south Trinidad and I remember as as a kid by Pompey ground the parlor their the lady use to put a lil rum in the red mango when she made it. It use to taste good I want to know if anyone ever had it like that.

Hmm, I'm thinking about trying this but using Roselle as the red coloring and to add that nice cranberry flavor instead of food coloring as I never buy food coloring personally.
