Hi Mina! The tofu dish you guys tried is called 百页结, literally "knotted tofu skin". The seasonings vary by Chinese province but it's typically seasoned with hot chili oil, soy sauce, and/or Chinese peppercorns. The other thing was probably scallion pancake.

Referring to 10:34, the dish originated in sichuan, and it is called Mala (directly translated as numbing and spicy). we can pick our dished and they will fry it up in this sauce which is a blend of a ton of spices (can go up to more than 20 types of spices!!!) along with chilli oil and sichuan peppers. one of my favorite food!!

6:55 mala yatou - "mala" is a numbing spice and "ya" is duck and "tou" is head, everything they sell is duck not chicken 8:00 the pancake you ate is called "jian bing" it's made by folding the dough multiple times while putting oil on the outside to make those flaky layers 11:20 the tofu you ate is what we call "dou fu pi" which is direct translation tofu skin. It's basically dried tofu flattened and it's a basic chinese cold side dish

Mina, the pancake is called 蛋煎餅, translated to pan-fried pancake with egg. The thin tofu is called 百葉, translated to 'hundred leaves'. They are sometimes served in julienne or tie in a knot. Often sold in stacks, maybe that's why it's called a hundred leaves?
