-Meatloaf (*Rough Recipe*)
3 tablespoons olive oil
1 large zucchini, finely diced
1 red bell pepper, finely diced
1 yellow pepper, finely diced
5 cloves garlic, smashed to a paste with coarse salt
1/2 teaspoon red pepper flakes, divided
Salt and freshly ground black pepper
2 flax eggs
1/4 cup chopped fresh parsley leaves, plus more for garnish
1 pack beyond meat grounds (www.beyondmeat...)
1 pack Trader Joe's cooked lentils (or 17.6 oz)
1 cup bread crumbs
1 cup ketchup, divided
1/4 cup balsamic vinegar
2 tablespoons Worcestershire
1 teaspoon liquid smoke
Bake the meatloaf at 425F for 1 to 1 1/4 hours. Remove from the oven and let rest for 10 minutes before slicing.

So sweet his family is so accommodating, I struggle with that in my family. My bf and I usually have to just bring food for ourselves, but one time I brought a vegan lasagna and my 80 something year old grandma said it was amazing!

I’ve become vegetarian as of early may 2020 and slowly merging to vegan.... I found the most DELICIOUS shredded mozzarella at Walmart. It’s made by GOOD PLANeT. You guys have to try it... it’s melty and so good! It’s vegan and soy free...

As there are a lot of bell peppers in the supermarkets at the moment - I took some 3-2-1 burger mix (3 cups of beans, two cups of cooked rice and one cup of oats with seasoning) and stuffed some halves of red bell peppers which I had blanched for 3- 5 minutes in boiling water first. They came out really well and I had the extra for lunch the next day cold with salad and they were delicious both hot and cold.
