How to Season A Smoker

Seasoning the Outlaw Patio Smoker
We are excited to add the Outlaw Patio Smoker to our collection. It's a solid pit with a ton of great feature that most patio style smokers are lacking.
Today we are going to cover the process we do in order to season a new pit. It's pretty straight forward but seasoning you smoker allows you the time to learn the pit before you actually start smoking on it.
First thing first, we need to get the pit clean before we do anything else. With all of the welding and fabrication it takes to build one of these pits, there is always a possibility that a small amount of welding slag, dust, or metal shavings will be in the bottom of the pit. Take the time and rinse the pit out with water. Don't worry about rust because we are about to put a fire in it as soon as its clean.
To build a fire in this Patio model, we will take the fire basket out to add the charcoal. I used about a half a chimney of lump charcoal. If you do not have a chimney to judge this with, a half pan of lump charcoal is a great starting point. We then placed the back in the fire box and lit it with two fire starters. Leaving the doors open for a few minutes allows the fire to catch a little quicker.
Once the smoker comes up to temp and the cook chamber dries out, its time to get some cooking spray applied. You can use any time of cooking oil you would like but I would stick with a vegetable or canola oil. You want to get all the surfaces covered and continue to hold a steady temp around the 350-400 range.
Now is a great time to play with the air flow on the smoker to learn how it reacts. This will help you once its time to start cooking on your new pit.
Keep the pit running clean and check it every 30 minutes or so. Add wood as you need it and let the pit do its job.
Once you are satisfied with the seasoning process you are ready to cook!!
This pit ran like a dream and was a blast to learn. We look forward to learning this pit and have a ton of great ideas for videos in the future.

I’m so happy someone finally did a video about seasoning a pit. When I got into grilling and smoking this is a step I completely ignored. Next new smoker will be seasoned! Thank you!!

Congrats on the new pit Mark. I was just talking to Jay about his pits a couple of weeks ago, ive seen a few at some recent competitions and they look incredible. This little patio model I think will be a good one for a lot of folks

Thanks! Definitely one of the best pits I have cooked on. I kept it at 400 for about an hour or so. Then backed it down to 275 before throwing some chickens on lol.

When you’re draining grease out of the drain valve do you attach a bucket to it or just set one on the ground. If you do hang one is there a particular bucket or method to hang it? My patio comes in a few days and can’t wait!

Honestly, I use aluminum pan in the bottom of the pit and throw them away when they get dirty. Then just wipe out the bottom with a paper towel. I have never used the drain lol.

After seeing a few videos that feature this outlaw I checked out the outlaw website. There isn’t any pricing information. If you don’t mind saying; what is the price range of this model? Also how does it compare to a similar size Lone Star Grillz offset?

These pits are in the $3400 range. As far as comparing them I have not cooked on a Lonestar but I can tell you the outlaw is truly hand built and has great air flow.

Yes, the patio is 24x40 and the hybrid I have is 28x60.

IMHO don't care for the aerosol nonstick sprays, prefer simple spray bottle of (cheap) olive oil, canola oil, or peanut oil. I'd have removed grates first time around so I could get entire insides then put them back in for 2nd / 3rd coating
