Not so fast. I assume you're talking about at 4:05. That would be a blunder because at the end of the line, Jose would play dxe2 and you can't stop promotion. If you mean on any subsequent move after Ben played Bd1, it was always defended by the knight (first it was defending the bishop, then it was defending the f6 pawn so there would be no fork).

Why? - competitive feelings. Trash talking opponent, telling yourself you're better, really believing you are. Most competitive ppl have this. Some vocalize it, others keep it as thoughts. Ben is streaming so the guy can't hear it....it's more like a thought. Less mean. - frustration. He lost before to him, and other ppl like him, who will play a few bad moves, get a bad position, and yet Ben will sometimes end up losing anyway. Frustrated with his own play, and also being past prime.
