I like the way they smoke the chicken over the wok. The way Chinese cook is very efficient. Everything is setup and don’t in organized manner. The super high flame cooking , in my opinion, makes all dishes tasty

This is the right way to fried rice. Some of the youtube videos you see they put a lot of oil in the wok then add eggs and then add rice that is way too much oil for fried rice.

These guys starts young, I started sixteen. Twelve sixteen hour shifts typically. No reprieve in sight but a dream to have your own place someday. That's what makes a great chef. The desperate dream.
