Taco Salad Bowl

Hello friends,
I am on a mission to use up as much of the food in my fridge, freezer and cupboards as I can before my move. This Taco Salad Bowl is a great way to use up leftovers and odds and ends in your fridge.
Using tofu to replace ground meat in this recipe is so easy. You simply season pressed extra firm tofu with the exact same taco seasoning. Then substitute a non-dairy sour cream such as the Toffuti I use in this recipe. The rest is exactly the same. The dressing is equal parts sour cream and salsa with a squeeze of lime juice.
For anyone wanting to include more plant based protein in their diet, this recipe is for you.

Speaking of making tofu not suck I just made your tofu bites this week and they were awesome! I love the idea of grating tofu and will definitely try that when I definitely make this dish. I do have a question completely unrelated to tofu, tacos or cooking at all...
