I Have Fond Memories Of My Mother Pounding Dough Out Like This When I Was A child. She used to say that she could take out all of her anger in that dough, lol! I used to knead/pound the dough too, lol, it's actually quite therapeutic!

It's called Lukang ox-tongue cakes: (Lukang is a place name in Taiwan) Although it"s called ox-tongue cakes but it's ovo-vegetarian. It has maltose as the filling. The ingredients contain flour, icing sugar, water, etc., You can see they roll them into dough in this video. Then you roll it into an oval shape, with the filling. It was a basically snacks in early Taiwan. Actually, I really love it haha. The rich fragrance of flour, soft maltose. I can't speak the exact words to explain, but you can try it by yourself. I don't really know what the ingredients are but it seemed like he just put dough inside of dough inside of dough again... Maybe butter for the filling? In the beginning. It is hard to tell and looks nothing like I thought it would but looks tasty I guess lol. The guy must get a hell of a workout though. That dough looks perfect.

I believe it's an "oil dough" (could have some lard too) and it's used to create layers. It's a method used in a few kinds of chinese pastries

The paste on the inside is basically a roux- flour and oil (probably lard and sesame oil) that are cooked together. It helps separate the dough layers, similar to the sheet of butter used in laminated European pastry like croissants.
