I have a vortex cone. Great for chicken. I like to put a chunk of apple wood for extra flavor. Also, I believe that closer to the dome is hotter since the vortex shoots the heat straight up and it flows down the sides of the cooker.

Love cooking with the vortex on my Weber! I cook things very close to how you just did it. Though I don't like wings, but prefer thighs and drum sticks. When cooking the drum sticks, I dampen it down a bit to slow things down. This helps render the tendon in the leg. A low an slow works best in this case. Then the same style sauce once done and they are amazing!

Good seeing you are back making videos! I'm a little surprised you haven't had a Vortex in all these years. i know you use the Slow n Sear for steaks... but you can buy a cast iron insert for the middle of your Weber, and put a full load of charcoal and get that plate super duper searing hot. Also, there's a Weber Wok you can get (or use use a regular wok... put a full load of coals in the Vortex, and you can get that wok restaurant level hot.

Yo T-Roy, I wanted to come on here and tell you that I made some ribs and was presently surprised. I did the 3-2-1 method. Spritzer with cranberry mango juice and when I wrapped, I put some Bravado Pineapple-Habanero sauce on the ribs. They turned out amazing. Spicy to my lips but sweet on taste. Soo good

Bravo. Love the videos. Wondering if you can share some advice. I'm guessing that you make BBQ ahead of time for a family get together. If so, what is the best way to bring it back up to temp. I'm planning on pulled chicken (thighs) and pulled pork. Would love your thoughts.

I put the meat in a foil pan with a little water to cover bottom of pan and seal with foil. Reheat at 275-300F, or a higher temp if pushed for time. Cheers!!!!

It is some great tasting sauce. I actually tasted a sample from the bottle and honestly wasn't that impressed, but once it was basted onto those wings and cooked a bit, it was some of the best tasting wings I've ever had!!! Cheers brother!!!!

That Gator Shake is good stuff! I was always under the impression that Anchor Bar in Buffalo NY were the orginal wing/sauce makers. Im definitely going to try some of that sauce though. Thanks for sharing

The Anchor Bar created the original Frank's mixed with butter. Which means the didn't actually create the sauce. The did cut their wings into flaps and drumettes. John Young served his wings whole. The question is did John Young really create his own sauce? The name Mumbo (or Mambo) sauce traces its roots to Chicago and Washington DC. Chicago was first, but the DC version is less of a bbq sauce and more ketchup mixed with duck sauce. Capital City Mambo Sauce is the popular one in the DC area. A lot of the Asian owned carryouts use that or make their own. I always have Capital City in my fridge, both regular and spicy. I use those in place of anything I would otherwise put ketchup on.

This is pretty much the only way I cook wings now. I rotate the lid 1/4 of the way every 10-15 minutes and flip the wings after the second lid rotation.

@@TROYCOOKS Thank you for all of the entertainment and tips over the years. And I should have said flip them and then rotate the lid for the second time. That would be about half way through cooking time. You can also try putting unlit coals in the vortex and adding a firestarter. Top down burn that will get screaming hot (it takes a bit of time) but stays screaming hot for plenty of time.

What's the difference between a vortex and normal indirect ?

Vortex concentrates heat towards the middle of the lid which reflects heat towards the edges. I reckon the normal indirect would work fine, but that heat from the vortex is so concentrated like a chimney upwards that it's like cooking in an air fryer if that makes sense? Cheers to ya!!!!

Hi T-Roy! Thanks for sharing this video! May I ask- does this "vortex" thingy eliminate smpke somehow? I do not see a whisper of smoke in this video! Maybe the charcoal is a "smokeless" brand? If so, please elaborate! Thanks!

The charcoal was already glowing from being heated in the chimney, so no smoke once added to the Vortex. Charcoal will smoke if it's starved of oxygen. The Vortex is like a tornado in a chimney inside the Kettle, so there is a lot of air moving and also no smoke. If I was to light the charcoal briquettes in the Vortex inside the Kettle, then I'd get smoldering smoke from the charcoal lighting. Hope that helps!!! Cheers Michael!!!

John, for Gator Shake think tangy lemon pepper on steroids! Excellent on poultry, seafood, veggie’s and popcorn!

Nothing like Old Bay IMO. Like Daddy Dutch said, it's got a tangy citrus flavor which I think is a hint of lime, but it does have an overall great flavor for poultry & seafood because it's not overpowering. Gator Shake along with Mumbo sauce is seriously some mighty fine eating!!!! These were some of the best wings I've ever eaten!

Hey Glen, all is going well on my end also! We have moved to New Mexico to be close to our kid and his family. I have 2 grandkids now!!! I can't say whether it's the Mumbo sauce or the Gator shake that was the secret ingredient, but the two together was a heavenly combo!!!! The sauce by itself out of the bottle tasted like a thinned out BBQ sauce with a slight vinegar flavor, but once it was on the chicken and heated up/dried out a bit on the wings, it was a different flavor which I can only describe as a mix of Southern thick BBQ sauce mixed with a North Carolina sauce. The Gator shake sat on that chicken marinating it in the fridge for 6 hrs and it really flavored all of that chicken, then adding that sauce at the end was the kicker for some extra flavor. Excellent flavor with that combination IMO. Give Kyung a hug!!! Miss you both also. If you are ever near Santa Fe or Albuquerque, give me a holler so we can get together! Cheers my brother!!!

Your wings look great! A bit of actual history though. Wings first appeared on a menu in the late 1800s, however they were listed as breaded. John Young, with his Mombo sauce, started selling breaded wings in the early 1960s, which would mean he was not the creator of them (Due to them being battered and fried on a menu from the late 1800s.) The wings that we eat today, and are considered to be the “Original” wings, were created by Teressa Bellissimo, who is credited for cooking the wings with no batter, and serving them tossed in a sauce, back in 1964. This history is supported by Time, History Channel, Chicken Wing Council, and countless others 👍
