Takikomi gohan is a wonderful, aromatic Japanese mixed rice dish made with seasonal ingredients. In this recipe we use two different types of mushrooms (enoki and shimeji) and chicken thighs as the main ingredients. But feel free to leave out the chicken for a vegetarian version. Or use different types of mushrooms for a change in flavor.
You will find takikomi gohan at many restaurants as well as included in bento boxes. But learning how to make takikomi gohan at home is very easy and is sure to be a house favorite!
