It works for the same reason IV saline needs to be 0.9% NaCl. If the salt concentration is higher on one side of the "barrier" than the other, water will diffuse across the barrier from the lower concentration side to the higher concentration side in an attempt to balance the concentrations. In an IV, your cells would burst if there wasn't salt added (water would diffuse into the cells to try decrease intracellular solute concentration), and in this case, water diffuses from the DCM into the brine solution.

Some ideas (from an organic/peptide synthesis PhD student): 1. Why not just repeat your extraction process multiple times on the same sample of red bull to see if you can continue to remove caffeine? In theory it should continue to remove a certain extent of the caffeine. 2. You could try a different organic solvent for the extraction instead of DCM. Ethyl acetate is a common choice, although it might be difficult to fully remove afterwards. You would need to rotavap it and maybe azeotrope with CHCl3, which is not ideal because chloroform is highly toxic. Diethyl ether may be another viable option for the extraction since it is relatively non-toxic and highly volatile, so it should be easily removed afterwards. 3. You could try to isolate the caffeine using flash chromatography (probably with a silica stationary phase). I don’t know if this would work though, because you would need to find (from lit. or experimentally) a TLC system that will give the caffeine an Rf ~0.3 with reasonable separation from the other compounds present (if they are not UV active, visualise them with a dye - see NotVoodoo for more info). If this prerequisite is met, then run the column, collect the fractions containing caffeine and set them aside. Collect any other fractions that are separated for future recombination. You would need to flush the column afterwards to retrieve everything remaining on the column (this is sometimes done with 10% MeOH in DCM, but methanol is toxic so it may not be viable). Recombine everything not containing caffeine, remove solvent etc., dilute with water, carbonate. Maybe this is feasible, but it is complicated by needing to be fit for subsequent consumption and preserving the original components in their original ratios.

About the smell: I suspect you may have "distilled" it off while removing the DCM. The fact that it smells at normal pressure means that some of it is definitely volatile, under a vacuum I'd say that more of it goes into the gas phase which is then removed along with the DCM, especially if you pull a vacuum on it for that long.

I think you're mistaken. Most of the smell ended up in the DCM that he drained out of the separatory funnel, and that DCM was never under vacuum. He separately cleaned it up and dried it on a hot plate in the vial, remember? That's where much the odorous chemical ended up, so clearly it was the DCM that pulled it out of the Redbull. Was there maybe SOME left in the Redbull that got vacuumed off? That's pure speculation. The fact is, much of the odor was extracted before he even applied a vacuum.

As for the smell, when you used the thing to evaporate water from it, I think you also lost some of those ingredients/aroms/oils that like to evaporate.
Fun fact: Red Bull made products that are/were not energy drinks but sodas called “Organics: By Red Bull”, the flavors are/were Simply Cola, Bitter lemon, ginger beer, tonic water, and purple berry. If Red Bull makes an Organics product that tasted like the original Red Bull, it could probably be a big success, since a lot of people drink Red Bull for the taste, but realize If they drink too much, they could have heart problems and/or die. So if a product like this was made, not only would people not have to worry about dying anymore, children could also drink it to without any worries to! Could also out perform the simply cola flavor and be the best selling of the bunch. We could probably make a petition for this.
