I leave out the apple and replace it with small dices of carrot and rinsed mild onion along with lots of small diced celery. I taste the finished salad then adjust for salt. Usually celery adds a good amount of saltiness by itself.

It won't be as tangy, but pears would be sweet and nice. Water chestnuts, if you can find them whole and grate them (or finely dice the sliced), would add great texture, and you could add a tiny amount of mild honey to replace the sweetness.
