Curry-Stewed Chicken is an amazing combination of curry & stew! It's a delightful fusion of sweet & savory flavors - a fusion of Indian & African cuisines. This dish reflects the multicultural people of Trinidad & Tobago and the Caribbean at large.
Ingredients:
🌟 1- 5lb chicken
🌟 1.5 tbsps of salt
🌟 2 tsps of black pepper
🌟 1 tbsp of roucou/annatto
🌟 3 tbsps of minced pimento peppers
🌟 1 large onion, diced
🌟 4 tbsps of garlic, minced
🌟 a few thyme sprigs
🌟 2 tbsps of ginger (your preference)
🌟 2 tbsps of celery leaves
🌟 1.5 tbsps of avocado oil
🌟 2 tbsps of sugar
🌟 2 tbsps of curry blend
*Optional ingredients: ketchup & soy sauce
