will brunello's acidity and tannin go lower as continue aging or even trying on an older vintage? really appreciate for the answer cause im new into wines.

Bryan, sorry for the long overdue reply. Yes, both tannins and acidity will decrease as they age, which is why in general, wines like these and Cabernet, with naturally high acid and tannins can be aged longer than a Pinot Noir for example.

Are you really wasting that Chianti Riserva for a pizza? What kind of pizzas do they make in your area? That wine works with Florentine steak and Brunello with very cooked and flavorful meats such as stew or braised. Both wineries you have chosen are excellent value for money. Regarding the most expensive Supertuscans with Bordeaux blend they are super only for the price, if I have to spend that money I go to Bordeaux and drink better. Different speech for some 100% Sangiovese such as Flaccianello, Cepparello or Fontalloro, outstanding wines at more acceptable prices.
