Vakalolo is a soft and sticky cake/pudding that is steamed in banana leaves. The banana leaves impart a flavor that elevates the dish to another level. This simple, yet tasty, dessert/snack is an islander favorite.

First congrats on the dish. I'm Fijian so my apologies for a little correction - that is called tavioka solo or tavioka yaca or 'vakalavalava' or just tapioca or cassava cake. A variation on that and makes it even delish is mixing in equal parts grated ripe banana. Like amazing !! Another variation is baking the same in a pan ( like a cake ) and when done, cover the top with a thin or thick layer of whipped (stiff ) condensed milk & lemon. ... Now vakalolo means "in coconut cream". It's a desert where the pounded cooked cassava or breadfruit or taro is cut or shaped into bite size pieces and generously coated with coconut cream caramel - which is done by slowly melting brown sugar ( even white ) so it does not burn and once all melted and looking golden brown you add thick coconut cream then cook this for some time til it's reduced to a nice syrupy consistency. My top favorite snack/desert. So delicious and healthy too. Favorite since my childhood in Fiji. I saw the Phillies make it using eggs and boy was I surprised. So I made a batch and let them try, boy oh boy, were they surprised more than me !😱. I love authentic Fiji foods. Vinkavakalevu lewa 💐🙏🏻⚘. Glad I found this channel. May you prosper more !!

I was surprised when I first heard your voice I thought you were Asian(Filo). When you started narrating and using the word 'i', I was shook. No insult Intended 🥰 Your voice just reminded me of my very cute petite Filo friend. Thanks for the upload. Some I purchased in the past at the fiji markets had a brown sauce oozing out around the cassava cake. Is that just more sugar sauce?

I don’t remember if I shared this tip in my video but if you place the leaves on fire just briefly, it makes it more pliable. Any type of heat will help it become easier to work with. I hope this helps :)

This snack is called ‘madrai’ NOT Vakalolo!! Vakalolo is made with a lolo syrup!!!!!!
