Sadly it turns out that Kamikoto is lying their butts off since they are made in China, the steel isn't from Japan at all, and no respectable chef will claim to use them either. And in a comparison against a cheap Target knife, the Target knife wins in all categories including value, durability, holding an edge, and being able to be re-sharpened. It seems the best part of those knives is the box they come in.

.... Yaaa, I discovered Japanese Damascus Steel knives over (10) years ago ( and have a nice small collection now )... SWEET !!! ... Now get yourself a "Ceramic Sharping Rod/Stick" And throw your "Sharpening Steel" overboard ... Why ??? ... The "Rockwell Hardness of the knife is more then the hardness of the of the "steel" ... so you are sharpening the Sharpening Steel and dulling the Damascus knifes' edge ... a "Ceramic Rod/Stick" will keep them ... SHARP !!! ... my "go to" knife is a "Kiritsuke" ... You are correct and have discovered something the chefs know ... a good sharp knife makes cooking, shear enjoyment !!! Be careful with the fingertips ... HaHa ( also get a "King" wetstone and learn how to hand sharpen the knives ... it is very easy ... ZEN ... oohhmmm !!! )

... I did a little research ... Kamikoto Knives are forged SS ... so they will not rust but are slightly softer metal ... so they will lose their edge ... BUT ... they are easily re-sharpened . A Damascus Steel is so hard it retains a edge much longer but it takes longer to re-sharpened ... so all the things I said about a ceramic stick/rod hold true as does a "King" Wetstone ... It is peaceful (for me) to sharpen my knives ... cause I am putting "Love" into them ... and that makes the food taste better ... cooking is all about "love" ...

@@TaylorsTravels I love your videos and I think you're awesome and a true inspiration for those of us who want to get out and live that life but for various reasons can't right now. However; whilst I get that you need to make these videos be profitable I do think that your videos are becoming less enjoyable the more popular you become. About two and a half minutes of this ten minute video was taken up by ads and very little happened during the rest of the video. It definitely feels like you made this video just to make money. Your earlier videos felt like you were trying to share your adventures and inspire people and if you wanted it to be profitable then that was more of a secondary concern.

Nov 11 - Taylor - Here's an update following a teleconference with Harris Crew and the Toronto Boat Show staff. They are going to get set up so that presenters can be remote.
